With each heat wave that hits Southern California in the Summertime, my thirst for something refreshing grows stronger and stronger. I always make sure to drink plenty of water to keep from getting dehydrated, especially when I’m working outside, but some days I need a little something more. While I’m typically a wine and rosé kind of gal, I tend to crave a well-made cocktail during the Summer season. And the fruitier the better!
A few weeks ago, during a grocery run, Mike and I came across a sale on whole pineapples—only 98 cents each! We picked up a few and I instantly searched for drinks to make on Pinterest. Dole Whip Floats from Disneyland had been on my mind the last few months, so I figured why not make something similar?
After reading through several Dole Whip copy-cat recipes and trying to find which combination of ingredients would work best for the type of cocktail I was looking to make, I finally settled on the perfect combo. With just the right amount of sweetness to compliment the coconut flavor of the rum, this Malibu Pineapple Slush is sure to get you into the Summer mood and dreaming of a tropical vacay. It’s really simple to make and even easier to drink… Or gulp 😛

2 to 3 cups of freshly cut pineapple, frozen
1 cup of Malibu rum
1 teaspoon of sugar
Add frozen pineapple and Malibu rum to blender and mix until all the pineapple chunks are gone. Taste then add sugar; depending on your preference for sweetness, add more or less than a teaspoon. Serve in a short cocktail glass. Sip and enjoy!
Makes 2 drinks.
Note: pineapple must be frozen for this recipe to work.
